It's hard to believe that we are reaching the end of March. Our big focus this month was trying to find a routine amongst the chaos. It is hard to juggle all our responsibilities and still think about what we have to make for dinner. It becomes especially hard when you need to think about going "meatless".

As always, we want to help take on that burden and make dinner a little easier for you. This newsletter is dedicated to some of our favorite "meatless" recipes in honor of Lent and in our search to find recipes that can be quicker to make and a little more health conscience.

What to Make This Month

As we mentioned, Lent is in full swing. We know not everyone practices, but we still think it is always a good idea to try to go meatless at least one day a week. We have put together some of our favorite go-to meatless recipes that require a little bit of your time and a handful of ingredients.

Don't get us wrong, we love meat. However it is important to abstain from time to time in favor of other foods like fish, shrimp, or extra vegetables. These sorts of dishes help reduce the risk of heart disease, bring added nutrients and can help with weight loss. Find our favorite Meatless Recipes HERE

On theme with our "meatless" March, we are featuring our Whole Roasted Snapper. Now we know that this seems like the opposite of easy and carefree. However we need you to trust us. This recipe is a healthier version of our traditional Pargo Frito (whole roasted fried snapper). It's actually an even easier version, and obviously a little healthier for you (since we are leaving out the whole frying part).

We love this recipe for many reasons. First of all, when you serve this you just look fancy. It's a beautiful dish that just makes it seem like you were cooking all day. This brings us to reason number two, this recipe is actually very simple. The hardest part about this is going to the fish market and finding the fish you want to roast. Tools We Can’t Live Without:

Sheet pans and roasting pans are a must. We love preparing something the night before or in the morning on a sheet pan and boom it’s ready to go in the oven when you are ready. A large sheet pan is also a great place to make two roast chickens.
